# Step-by-Step Directions:

01 - Preheat the oven to 190°C. Peel and slice potatoes into thick rounds. Mince garlic and slice peppers. Chop the tomatoes.
02 - In a small saucepan, melt butter over medium heat. Stir in flour and cook until lightly golden, about 1 minute. Add tomato paste and cook for another minute. Gradually whisk in hot water until the sauce is smooth. Season with salt, black pepper, red pepper flakes, and dried thyme.
03 - Place chicken drumsticks in a baking tray. Surround the chicken with potato slices, peppers, and tomatoes.
04 - Pour the prepared tomato sauce evenly over the chicken and vegetables. Cover the tray with aluminium foil and bake for 40 minutes.
05 - Remove the foil and bake uncovered for an additional 15 to 20 minutes until chicken is golden and potatoes are tender.
06 - Allow the dish to rest for a few minutes before serving hot. Pair with bread, rice pilaf, or a light salad if desired.
