Preheat oven to 200°C. Lightly grease a large baking sheet with non-stick spray.

Rinse and scrub red potatoes thoroughly, then dry. Cut each potato into pieces approximately 2.5 centimetres wide.

Place potato pieces in a large mixing bowl. Drizzle with vegetable oil and toss to coat evenly.

Add garlic salt, Italian seasoning, and onion powder to the potatoes. Gently toss again to ensure even distribution of seasonings.

Spread seasoned potatoes in a single layer on the prepared baking sheet. Evenly sprinkle freshly grated Parmesan cheese over the top.

Bake in preheated oven for 25 to 30 minutes, or until potatoes are golden and fork-tender.

Remove from oven and let cool for 5 minutes before serving warm.
