Heat a small nonstick skillet over medium heat until hot.

Evenly scatter the crumbled feta cheese around the edges of the skillet, leaving a clear space in the center. Cook the feta until it begins to melt and lightly bubbles, about 1–2 minutes.

Crack the large egg into the center of the pan. Season with black pepper and add red pepper flakes if desired.

Cover the skillet with a lid and reduce heat to medium-low. Cook until the egg white is set, yolk remains runny, and feta is crispy and golden, approximately 3–4 minutes.

While the egg cooks, warm the tortilla in a dry skillet, over a gas flame, or in the oven until pliable. Mash the avocado and spread it evenly over the tortilla. Squeeze the lime wedge over the avocado.

Carefully transfer the feta-crusted fried egg onto the prepared avocado tortilla. Garnish with finely chopped fresh chives and serve immediately.
