Cheesy Loaded Creamed Corn (Printable Version)

# What You'll Need:

→ Base

01 - 800 g sweet corn, fresh or frozen
02 - 2 tablespoons granulated sugar
03 - 60 g unsalted butter, cubed
04 - 240 ml half and half
05 - 170 g cream cheese, cut into pieces

→ Cheese and Seasonings

06 - 60 g grated Parmesan cheese
07 - 0.5 teaspoon salt, or to taste
08 - 0.25 teaspoon ground black pepper
09 - 0.25 teaspoon ground cayenne pepper

→ Toppings

10 - 40 g red onion, finely diced
11 - 25 g scallions, thinly sliced
12 - 60 g crispy bacon, crumbled
13 - 60 g shredded cheese blend

# Step-by-Step Directions:

01 - Add sweet corn, sugar, butter, half and half, cream cheese, salt, pepper, and cayenne to the slow cooker. Do not add Parmesan at this stage, and reserve toppings for serving.
02 - Set slow cooker to High for 3-4 hours or Low for 6-8 hours. Stir occasionally if desired. The mixture should be heated through and cream cheese fully melted.
03 - Once the cream cheese has completely melted and the mixture is smooth, stir in the grated Parmesan cheese until fully combined. Taste and adjust salt and pepper as needed.
04 - Top with red onion, scallions, crispy bacon, and shredded cheese. Cover and keep warm until the cheese has melted before serving.

# Helpful Notes:

01 - For best flavor, avoid using canned corn. Fresh or high-quality frozen corn delivers the best taste and texture.
