Place ground pork, dried sage, thyme, salt, black pepper, onion powder, garlic powder, and smoked paprika in a large mixing bowl. Add crushed red pepper flakes and brown sugar if desired. Mix thoroughly by hand until the seasonings are evenly distributed.

Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow flavors to develop and ease shaping.

Divide the sausage mixture into 8 equal portions. Form each into a round patty approximately 1.25 cm thick.

Heat a large skillet over medium heat and lightly grease with oil or spray. Arrange patties in the pan and cook for 3 to 4 minutes per side, until golden and an internal temperature of 71°C is reached.

Transfer cooked patties to a plate lined with paper towels to absorb excess grease. Serve immediately with preferred accompaniments such as eggs, toast, or avocado.
