Lay a tortilla flat, spoon a generous amount of the sausage and egg mixture onto its center, then roll tightly, folding in the sides to encase the filling. Repeat with remaining tortillas and filling.

Heat cooking spray or oil in the skillet over medium heat. Place roll ups seam-side down and cook until golden brown on all sides, about 2 to 3 minutes per side.
