Toast the whole-grain bread slices to your preferred crispness and set aside.

Halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, incorporate lemon juice, and season with salt and pepper.

Bring a pot of water to a gentle simmer and add white vinegar if desired. Crack each egg into a small bowl, then slip gently into simmering water. Poach for 3 to 4 minutes for a runny yolk, or longer for a firmer yolk. Remove with a slotted spoon and drain on paper towels.

Generously spread mashed avocado on each slice of toast. Top each with a poached egg.

Finish with a sprinkle of red chili flakes, microgreens, or everything bagel seasoning. Optionally, drizzle with olive oil. Serve immediately.
