Combine cornstarch with water until smooth and stir into the apple mixture. Cook for an additional 1 to 2 minutes to thicken. Remove from heat and mix in vanilla extract.

Lay each flour tortilla flat and spoon an even amount of the apple filling down the center. Fold the bottom edge upwards slightly and roll tightly into a wrap. Secure with a toothpick if desired.

In a small pan, melt the remaining 15 grams of unsalted butter with brown sugar over low heat until smooth and glossy. Drizzle this glaze over the wrapped tortillas.

Heat a non-stick skillet over medium heat. Place wraps seam-side down and toast until golden brown, then flip to crisp all sides evenly. Serve warm, optionally dusted with powdered sugar.
