Roll out thawed puff pastry to 1.5 times its original size and cut into eight 9 cm rounds using a circular cookie cutter.

Place parchment paper on a baking sheet and add 8 small dollops (about 7.5 ml each) of honey. Score the brie rounds and position one atop each honey dollop. Wrap each brie round tightly with a puff pastry round.

Pinch the edges of the puff pastry with a fork to seal and prevent puffing during baking.

Brush the assembled bites with beaten egg and bake at 200°C for 18-20 minutes until golden and puffed.

Transfer bites to a serving platter, sprinkle with chopped chives, and drizzle with additional honey.
