# Step-by-Step Directions:

01 - Whisk the honey, cinnamon and vanilla together in a small bowl. Set aside.
02 - Preheat your oven to 400°F (200°C) and spray a baking dish with non-stick cooking spray.
03 - Using a sharp knife, core the apples leaving the sides ½-¾ inch thick. Place the cored apples in the prepared baking dish.
04 - In a bowl, combine the coconut sugar, rolled oats, chopped pecans, cinnamon, nutmeg, and melted butter. Mix until well incorporated.
05 - Divide the filling mixture evenly between the cored apples, gently packing it in. Pour the apple juice around the apples in the dish.
06 - Cover the baking dish with aluminum foil and bake for 40-45 minutes until the apples are tender.
07 - Remove the foil and bake for an additional 5 minutes to crisp up the filling.
