Whisk the honey, cinnamon and vanilla together in a small bowl. Set aside.

Preheat your oven to 400°F (200°C) and spray a baking dish with non-stick cooking spray.

Using a sharp knife, core the apples leaving the sides ½-¾ inch thick. Place the cored apples in the prepared baking dish.

In a bowl, combine the coconut sugar, rolled oats, chopped pecans, cinnamon, nutmeg, and melted butter. Mix until well incorporated.

Divide the filling mixture evenly between the cored apples, gently packing it in. Pour the apple juice around the apples in the dish.

Cover the baking dish with aluminum foil and bake for 40-45 minutes until the apples are tender.

Remove the foil and bake for an additional 5 minutes to crisp up the filling.

Remove from oven and serve each apple with a scoop of vanilla ice cream and a generous drizzle of the cinnamon honey sauce.
