Preheat oven to 200°C. Ensure puff pastry is fully thawed if frozen.

Combine strawberry cream cheese, strawberry jam, and pink food coloring in a mixing bowl; mix until smooth.

Roll out pastry on a lightly floured surface. Use a 7.5 cm heart-shaped cutter to cut shapes. Score a smaller heart approximately 0.8 cm from the edge of each shape without cutting through.

Spread cream cheese mixture inside the scored area of each heart. Add diced strawberries to the center.

Beat egg with water to create egg wash. Brush edges of each pastry, then sprinkle sparkling sugar over brushed areas.

Place pastries on parchment-lined baking sheet and bake for 14–15 minutes until golden brown.
