Beat softened butter with granulated sugar at medium speed, scraping the bowl as needed, until pale and fluffy, about 2–3 minutes.

Incorporate eggs one at a time, beating thoroughly and scraping the sides of the bowl after each addition.

In a separate bowl, whisk together vanilla extract and Greek yogurt.

In another bowl, sift cake flour, baking powder, baking soda, and salt.

Add one third of the flour mixture to the egg mixture, followed by one third of the yogurt mixture, gently mixing after each addition. Repeat until all are incorporated, avoiding overmixing.

In a clean bowl, combine light brown sugar, all-purpose flour, cinnamon, salt, and cold cubed butter. Blend with a fork until the mixture forms small to medium crumbs.

Spread one third of the batter evenly in the prepared dish. Sprinkle a thin layer of cinnamon streusel on top. Repeat with remaining batter and streusel, finishing with streusel.

Bake for 12–15 minutes, or until a toothpick inserted in the center emerges clean or with a few dry crumbs.

Let cool in the dish for 10 minutes before slicing. Serve warm, optionally with coffee.
