Cook bacon slices in a skillet or oven until crisp. Transfer to a paper towel-lined plate to drain excess fat.

In a bowl, mash fresh raspberries with raspberry jam and chipotle chilli powder until well mixed.

Spread softened butter evenly on one side of each bread slice.

Place half of the bread slices buttered side down. Layer with cheddar cheese, cooked bacon, and a spoonful of raspberry chipotle filling. Top with remaining bread slices, buttered side up.

Heat a skillet over medium heat. Toast sandwiches on both sides until bread is golden and cheese is melted, about 3–4 minutes per side.
