Heat a large non-stick or cast iron skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until fully browned. Drain excess fat, then stir in taco seasoning and 30 ml water. Simmer for 2 to 3 minutes until well combined and flavors meld.

While the beef cooks, prepare the rice according to package instructions or use pre-cooked rice. Fluff the rice with a fork and keep warm.

Dice the tomatoes or prepare pico de gallo. Shred the romaine lettuce, chop cilantro, and prepare guacamole or slice avocado. Arrange each topping in small bowls for easy assembly.

In wide, shallow bowls, layer the rice first, then shredded lettuce and seasoned beef. Top with black beans, tomatoes, shredded cheese, sour cream or Greek yogurt, and guacamole. Finish by sprinkling chopped cilantro and drizzling lime juice over each bowl.
