Rub pork loin evenly with chili powder and garlic salt, ensuring all sides are coated.

Place pork loin in a slow cooker and pour Coca-Cola over the top until just covered. Set to low and cook for 8 hours until fork-tender.

Wash and scrub sweet potatoes thoroughly. Wrap each individually in foil and place on a baking tray. Bake at 200°C for 1 hour or until soft.

Remove the pork from the slow cooker, reserving 1 tablespoon of the liquid. Return pork to the cooker and shred using two forks. Add BBQ sauce, mixing to combine. Keep on warm setting until serving.

Slice each baked sweet potato lengthwise. Fluff with a fork and generously fill with pulled pork. Drizzle with additional BBQ sauce if desired before serving.
