Heat a large non-stick skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat. Add taco seasoning and 50 ml water. Stir and simmer for 3 minutes until fully combined.

Preheat the oven to 200°C. Place tortillas on a baking tray and bake for 3-4 minutes per side, or until just crisp and lightly golden.

Spread about 50 g refried beans evenly over 4 tortillas. Top each with a portion of the seasoned ground beef.

Place a second tortilla over each layered base. Spread 2-3 tablespoons enchilada sauce over the top tortilla. Sprinkle each with cheddar and pepper-jack cheese.

Arrange the assembled pizzas on baking trays. Bake in the centre of the oven for 5 minutes, or until cheese is fully melted and bubbly.

Remove pizzas from the oven. Garnish immediately with diced tomato, spring onions, and black olives. Slice and serve warm.
