# What You'll Need:

→ Crust

01 - 1 1/2 cups graham cracker crumbs
02 - 1/4 cup granulated sugar
03 - 1/3 cup unsalted butter, melted

→ Filling

04 - 16 oz cream cheese, softened
05 - 1/2 cup granulated sugar
06 - 2 large eggs
07 - 1/4 cup sour cream
08 - 1/4 cup fresh lime juice
09 - 1 tablespoon lime zest
10 - 2 tablespoons tequila (optional)
11 - 1 tablespoon triple sec or orange juice
12 - 1 teaspoon vanilla extract
13 - Pinch of salt

→ Garnish

14 - Coarse sea salt
15 - Lime wedges

# Step-by-Step Directions:

01 - Preheat oven to 163°C. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
02 - In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.
03 - Bake crust for 8–10 minutes, then remove and set aside to cool slightly.
04 - In a large bowl, beat cream cheese and sugar until smooth and creamy.
05 - Add eggs one at a time, mixing well after each. Stir in sour cream, lime juice, lime zest, tequila, triple sec, vanilla, and salt. Mix until fully combined.
06 - Pour the filling over the cooled crust and smooth the top. Bake for 30–35 minutes, or until the center is set and the edges are lightly golden.
07 - Cool completely at room temperature, then refrigerate for at least 3 hours or until chilled.
08 - Lift bars out of the pan using the parchment overhang and cut into squares. Garnish with a sprinkle of sea salt and lime wedges if desired.

# Helpful Notes:

01 - For a non-alcoholic version, omit tequila and triple sec and use extra lime juice and orange juice instead.
02 - Use full-fat cream cheese and sour cream for the creamiest texture.
03 - Bars can be made a day in advance and stored in the fridge.
