Cook tapioca pearls in boiling water as per package instructions until translucent. Rinse thoroughly under cold water and drain well.

In a blender, combine one and a half diced mangoes, coconut milk, evaporated milk or regular milk, sugar, salt, and water. Blend until completely smooth.

Stir the drained tapioca pearls into the blended mango mixture and mix to combine evenly.

Transfer the mixture to a container and refrigerate for at least 1 hour until thoroughly chilled.

Distribute into serving bowls or glasses. Top with the reserved diced mango and garnish with mint leaves if desired.
