Preheat a gas or charcoal grill, configuring one side for direct high heat and the other for indirect heat. Aim for 120°C on the cooler side.

In a large bowl, gently combine ground chuck, barbecue sauce, chili powder, salt, and pepper. Avoid overmixing. Shape the mixture into 2 patties, each approximately 225 g and 2 cm thick.

Lightly oil the grill grates to prevent sticking.

Place burger patties on the cooler side of the grill. Cover and allow to cook for 10 minutes. Flip patties and cook for an additional 5 minutes, until nearly at desired doneness. Use a meat thermometer to monitor internal temperature.

Transfer patties to the hot side of the grill. Sear for 1-2 minutes per side until a crust forms. Top each patty with a slice of pepper jack cheese and allow to melt.

Place each patty onto a toasted bun. Add extra barbecue sauce and your favorite toppings. Serve immediately.
