# What You'll Need:

→ Main Ingredients

01 - ¼ cup olive oil
02 - 1 pound pork tenderloin, cut into 1-inch pieces
03 - ½ teaspoon salt, or to taste
04 - ½ teaspoon black pepper, or to taste
05 - ½ teaspoon chili powder
06 - 1 teaspoon garam masala
07 - ½ teaspoon cumin
08 - 1 medium onion, chopped
09 - 6 cloves garlic, minced
10 - 1 medium carrot, chopped
11 - 1 medium jalapeno pepper, chopped
12 - 1½ cups red lentils
13 - 2½ cups vegetable broth, low sodium or no sodium added
14 - Parsley for garnish

# Step-by-Step Directions:

01 - In a Dutch oven, heat 2 tablespoons of olive oil. Season pork pieces with salt, pepper, and chili powder. Add seasoned pork to the pot and sear until browned. Remove meat from the Dutch oven and set aside.
02 - Add the remaining 2 tablespoons of olive oil to the Dutch oven and heat. Add garam masala and cumin, stir, then add onion, garlic, carrot, and jalapeno pepper. Stir well and cook until browned, about 2 to 3 minutes.
03 - Add lentils, seared pork, and vegetable broth to the Dutch oven. Stir well. Taste and season with additional salt and pepper, if needed. Cover and cook until lentils are tender, approximately 30 minutes.
04 - Garnish with parsley and serve over rice or plain, as desired.

# Helpful Notes:

01 - Adjust the spiciness by removing seeds from the jalapeno or adding more chili powder.
02 - Use fresh spices for the best flavor, especially garam masala.
03 - Sear the pork properly to develop a deep flavor in the curry.
04 - Prepare vegetables and meat in advance to save time.
05 - Serve with plain yogurt for a creamy contrast.
06 - Allow lentils to simmer gently to fully absorb the spice flavors and achieve a creamy texture.
