Place a rack in the center of the oven and preheat to 260°C. If using a pizza stone, place it in the oven to preheat alongside.

In a large skillet over medium heat, warm the olive oil and cook the ham, stirring occasionally, until crisp and lightly browned, approximately 2 minutes. Remove ham and set aside.

Using the same skillet, cook the pineapple pieces, stirring occasionally, until golden brown on all sides, about 2 minutes. Combine with the cooked ham.

If not using a pizza stone, grease a pizza pan or baking sheet with cooking spray and sprinkle with semolina flour. If using a stone, sprinkle flour on a pizza peel.

Form the pizza dough into a 1.3 cm thick round approximately 30 cm in diameter on the prepared surface. If the dough resists holding shape, allow it to rest for a few minutes before reshaping.

Spread pizza sauce evenly over the dough, leaving a 1.3 cm border around the edge. Distribute the ham and pineapple evenly on top, then sprinkle generously with grated mozzarella cheese.

Bake in the preheated oven until the crust is crisp and golden brown and the cheese is melted and bubbly, approximately 12 to 15 minutes.
