Haluski Cabbage and Noodles (Printable Version)

# What You'll Need:

01 - 6 slices thick cut bacon, chopped
02 - 6 tablespoons unsalted butter, divided
03 - 2 large onions, chopped
04 - 1½ pounds green cabbage, cored and cut into bite size pieces
05 - ½ teaspoon salt, or to taste
06 - ¼ teaspoon pepper, or to taste
07 - 1 pound medium-wide egg noodles

# Step-by-Step Directions:

01 - In a large Dutch oven cook the bacon until almost crisp.
02 - To the same Dutch oven add 3 tablespoons of the butter and melt. Add the onions and sauté for 5 minutes until soft and translucent.
03 - Add the cabbage, salt and pepper, stir everything together and cook for 10 minutes covered, until the cabbage softens.
04 - Meanwhile, cook the noodles according to package instructions. Drain and set aside.
05 - Add the cooked noodles to the Dutch oven, remaining 3 tablespoons of butter and stir. Cook for a couple more minutes, until everything is heated through.
06 - Taste for seasoning and adjust with salt and pepper as necessary. Serve warm with lots of freshly ground black pepper.

# Helpful Notes:

01 - Bacon Substitute: If you're vegetarian, consider using a smoky meat substitute instead of bacon.
02 - Noodle Choices: While egg noodles are traditional, you can also use other pasta like fettuccine or tagliatelle.
03 - Cooking the Cabbage: The cabbage should be cooked until tender but not mushy, preserving a slight crunch.
04 - Serving Suggestions: Best served warm with freshly ground black pepper. Add a sprinkle of fresh parsley for added color and flavor.
05 - Storage: Leftovers can be refrigerated for 3-4 days and reheated on the stovetop or microwave.
