Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon. Drain excess fat and return the beef to the pan.

Add diced onion and minced garlic to the skillet with the beef. Sauté for 3–4 minutes until the onion is translucent and fragrant.

Stir in the diced potatoes, beef broth, paprika, dried thyme, salt, and black pepper. Mix thoroughly to combine. Cover and simmer over medium-low heat for 20 minutes, stirring occasionally, until the potatoes are tender.

Sprinkle shredded cheddar cheese evenly over the top. Cover and let it sit for a few minutes until the cheese is melted.

Remove from heat and sprinkle with freshly chopped parsley. Serve immediately while hot.
