In a small bowl, thoroughly whisk together olive oil, lemon juice, honey, smoked paprika, minced garlic, salt, and black pepper until fully combined.

Arrange salmon fillets, skin-side down, on a tray. Evenly distribute the marinade over the fillets, ensuring each piece is well coated. Allow to marinate at room temperature for 15 to 30 minutes.

Preheat the grill to medium-high heat, approximately 200°C. Oil the grill grates to prevent sticking.

Place salmon fillets skin-side down on the prepared grill. Cook for 5 to 6 minutes without moving to achieve a clean sear.

Flip the fillets carefully using a spatula. Continue grilling for an additional 2 to 4 minutes, or until the salmon easily flakes with a fork and reaches an internal temperature of 52°C–54°C.

Remove salmon from the grill and let rest for 2 to 3 minutes. Garnish with chopped parsley and an extra squeeze of lemon juice, if desired.
