Dissolve the sugar in hot water until fully combined. Set aside to cool.

In a large pitcher, combine orange juice, Grand Marnier, cognac or brandy, and the cooled simple syrup. Chill until well chilled.

Just before serving, pour Prosecco into the chilled mixture and stir gently to combine.

Distribute the cocktail evenly into eight champagne flutes or similar glasses.

Tilt each glass slightly and slowly pour a splash of grenadine down the inside so it settles at the bottom, creating the sunrise gradient.
