Gently melt white chocolate in a microwave-safe bowl or double boiler, heating in 20-30 second intervals and stirring between bursts until fully smooth. Be careful to avoid burning.

Remove chilled truffles from refrigerator and dip each into the melted white chocolate to coat completely. Use a fork to lift them out, letting excess chocolate drip off, then place back on parchment.
