Honey Chipotle Chicken Rice Bowl (Printable Version)

# What You'll Need:

→ Chicken and Marinade

01 - 500 g boneless, skinless chicken thighs or breasts
02 - 2 chipotle peppers in adobo sauce
03 - 2 tablespoons adobo sauce
04 - 2 tablespoons honey
05 - 2 cloves garlic, minced
06 - 1 tablespoon fresh lime juice
07 - 1 tablespoon olive oil
08 - Salt and freshly ground black pepper to taste

→ Rice Base

09 - 300 g cooked long grain white rice or brown rice (about 1 1/2 cups cooked)

→ Fresh Toppings

10 - 100 g cherry tomatoes, halved
11 - 80 g cooked sweet corn kernels
12 - 1 ripe avocado, sliced
13 - 30 g fresh coriander leaves, chopped
14 - 1 tablespoon fresh lime juice
15 - 30 g shredded lettuce (optional)
16 - 30 g shredded cheddar cheese (optional)
17 - 2 tablespoons sour cream (optional)

# Step-by-Step Directions:

01 - Place chipotle peppers, adobo sauce, honey, minced garlic, fresh lime juice, and a pinch of salt into a blender or food processor. Blend until completely smooth, adjusting seasoning to achieve a balanced blend of sweetness and heat.
02 - Transfer chicken thighs or breasts to a shallow dish. Pour half of the chipotle sauce over the chicken, turning to coat evenly. Cover and marinate for at least 20 minutes in the refrigerator to allow flavors to penetrate.
03 - Heat olive oil in a large skillet over medium-high heat. Add marinated chicken and sear on both sides until golden brown. Reduce heat to medium low, brush with some reserved chipotle sauce, and cook until chicken is cooked through and juices run clear. Remove from skillet and allow to rest for 3 minutes before slicing.
04 - While chicken rests, prepare the rice according to package instructions. Prepare fresh toppings by halving cherry tomatoes, slicing avocado, chopping coriander, and organising corn, shredded lettuce, cheese, and sour cream as desired.
05 - To assemble, add a generous portion of cooked rice to each bowl. Top with sliced chicken, tomatoes, corn, avocado, and selected fresh toppings. Drizzle with remaining chipotle sauce and a squeeze of fresh lime juice.
06 - Garnish with chopped coriander. Serve immediately while warm for optimal flavor and texture.

# Helpful Notes:

01 - For meal prep, keep rice, chicken, and toppings separate until ready to serve to maintain texture and freshness.
