01 - 1.5 kg cucumbers (2 English cucumbers or 7-10 small ones)
02 - 1/2 medium purple or yellow onion, thinly sliced
03 - 1 garlic clove, pressed or grated

04 - 120 ml sour cream (reduced fat acceptable)
05 - 1/2 tablespoon fresh lemon juice
06 - 1 tablespoon fresh or frozen dill, chopped
07 - 1/2 teaspoon fine sea salt
08 - Pinch of black pepper

# Step-by-Step Directions:

01 - In a small bowl, combine sour cream, lemon juice, garlic, dill, salt and pepper. Stir thoroughly and set aside while preparing vegetables.
02 - Peel cucumbers if necessary and slice into thin rounds (or half rounds if using large cucumbers). Place in a large mixing bowl. Add thinly sliced onion.
03 - Just before serving, pour the dressing over the cucumbers and onions, and mix thoroughly to coat all pieces. After adding dressing, refrigerate and consume within 2-3 hours for optimal freshness.

01 - For a milder onion flavor, substitute 1/3 cup chives or green onion instead of purple/yellow onion
