Combine cottage cheese, eggs, garlic powder, and Italian seasoning in a personal blender or small food processor. Blend until smooth, about 30 seconds.

Line a sheet pan with parchment paper and lightly coat it with non-stick spray. Pour the blended mixture onto the prepared pan and use a spatula to spread it into an even layer.

Preheat the oven to 175°C. Place the sheet pan in the oven and bake for approximately 30 minutes, or until the edges are golden brown and the center is set.
