Preheat your oven to 350℉ (175°C). Spray an 8.5 × 4.5 × 2.75 inch loaf pan generously with cooking spray.

Mix all the dry ingredients together in a bowl: the flour, cocoa powder and salt.

In a clean bowl, whisk the egg whites until stiff peaks form.

In another bowl, mix the butter with the sugar until well combined and creamy.

Mix in the egg yolks and vanilla until well combined.

Add half the flour mixture and half the egg whites and mix until combined. Add the remaining flour mixture and mix well. Fold in the remaining egg whites with a spatula. Do not over mix!

Transfer the batter to the prepared loaf pan and bake for about 1 hour. The cake is done when a toothpick inserted in the center comes out clean.

Let the cake cool in the loaf pan for about 15 minutes. Run a knife around the sides of the loaf pan to loosen the cake and turn it over onto a cooling rack. Turn it upright and allow it to cool completely before slicing.
