Combine balsamic vinegar and sugar in a small saucepan. Bring to a boil over medium heat, then reduce to low and simmer until thickened and reduced by half, approximately 10 minutes. Remove from heat and set aside.

Heat a large skillet over medium-high. Add cubed chicken and cook, stirring, until thoroughly cooked and lightly golden. Season with salt, pepper, and Italian seasoning. Remove from heat.

Preheat oven to 200°C. Slice French bread in half lengthwise and arrange, cut side up, on a large baking tray.

In a small bowl, combine softened butter and minced garlic. Mix well and evenly spread on both bread halves.

Distribute cooked chicken evenly over both bread halves. Top with grated Mozzarella and scatter halved grape tomatoes across the top.

Bake in the preheated oven for 15–20 minutes, or until cheese is melted and bubbling.

Remove bread from the oven and let rest for 5 minutes. Top with fresh basil and drizzle with balsamic reduction before slicing and serving.
