Preheat oven to 375°F. Spray a small baking dish with cooking spray. Place chicken breasts in dish, coat with 1/4 cup Caesar dressing, season with pepper, and bake for 25 minutes or until internal temperature reaches 165°F. Let rest 5 minutes before dicing.

Cook bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate and chop into small pieces.

In a large bowl, combine chopped Romaine lettuce, diced chicken, bacon, 1/4 cup Parmesan cheese, and 1/4 cup Caesar dressing. Season with pepper and toss gently.

Preheat broiler. Cut French bread in half lengthwise and place cut-side up on baking sheet. Mix butter with minced garlic and spread evenly on bread. Sprinkle with Mozzarella cheese. Broil for about 1 minute, watching closely, until cheese is melted.

Remove bread from oven. Top evenly with Caesar salad mixture. Sprinkle with remaining Parmesan cheese. Slice and serve with extra dressing and lemon juice if desired.
