Preheat the oven to 425°F.

In a small bowl, lightly mash the avocado. Add diced tomatoes, lemon juice, and season with salt and pepper. Mix gently until combined and set aside.

Place a tortilla on your work surface. Add 2 to 3 tablespoons of cheese over half the tortilla, 1 to 2 ounces of smoked salmon, and 1 to 2 tablespoons of guacamole. Add a bit more cheese and fold the tortilla in half. Gently press down. Repeat with the remaining ingredients to create 6 quesadillas. Brush the tops with melted butter if desired.

Place the quesadillas on a baking sheet and transfer to the preheated oven. Bake for 8 to 10 minutes, flipping them halfway if necessary. Check to ensure the bottoms are crisping as well.

Remove the quesadillas from the oven. Slice in half, if preferred, and serve with sour cream, salsa, lime wedges, or your favorite toppings.
