Preheat oven to 190°C. Grease a 23x33 cm baking dish with nonstick cooking spray.

In a large skillet over medium heat, cook ground beef and diced onion for 8-10 minutes, breaking up beef with a wooden spoon until browned. Stir frequently.

Add garlic, ketchup, BBQ sauce, yellow mustard, salt, pepper, and diced pickles. Mix thoroughly and simmer for 2-3 minutes. Taste and adjust seasonings as preferred.

Evenly spread the beef mixture in the prepared baking dish. Arrange tater tots over the beef in a single, even layer.

Place uncovered dish in the oven and bake for 45-50 minutes until tater tots are golden and crisp.

Remove dish from oven. Scatter shredded cheddar evenly over the top. Bake for an additional 5-10 minutes until cheese is melted and bubbling.

Allow to cool for 5-10 minutes before serving. Garnish with crumbled bacon and any preferred optional toppings.
