Drain one 15-ounce can of chickpeas into a strainer set over a bowl, reserving the liquid.

Place the chickpeas, 2 tablespoons of reserved chickpea liquid, lemon juice, olive oil, tahini, garlic, and salt into a food processor or blender. Blend until very smooth, about 5 minutes, scraping down the sides as needed.

If the hummus is too thick, add more chickpea liquid 1 tablespoon at a time and blend until desired consistency is reached. Taste and adjust seasoning with additional salt or lemon juice as needed.

Scoop the hummus into a serving bowl and drizzle lightly with olive oil. Garnish with paprika, sumac, or chopped parsley if desired. Serve with pita wedges, chips, or raw vegetables.
