01 -
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
02 -
Wash the zucchini and cut into fry-shaped sticks, approximately 3 inches long and ½ inch thick.
03 -
In a small bowl, beat the egg until frothy. Add half of the salt and stir.
04 -
In another bowl, mix panko crumbs, grated parmesan cheese, dried oregano, and the remaining salt.
05 -
Dust the zucchini sticks lightly with all-purpose flour. Dip them into the beaten egg, ensuring even coating, and then roll in the panko-parmesan mixture.
06 -
Place the coated zucchini sticks on the prepared baking sheet in a single layer, ensuring they do not touch.
07 -
Bake the zucchini fries for about 20 minutes or until golden brown and crispy, flipping halfway through cooking time.
08 -
Remove the fries from the oven and let cool for a few minutes. Serve warm with a dipping sauce of your choice.
