# What You'll Need:

→ Fish and Seasonings

01 - 1 large fish fillet (150-225 g per person; cod, tilapia, or salmon)
02 - 1 teaspoon paprika
03 - 1 teaspoon Italian seasoning
04 - 1 teaspoon Cajun seasoning (or Old Bay/Creole seasoning)
05 - ½ teaspoon chili flakes
06 - 1 teaspoon optional fish seasoning
07 - ½ teaspoon salt
08 - ½ teaspoon freshly ground black pepper

→ Vegetable and Oil Mix

09 - 2 cups (300 g) cherry tomatoes, halved
10 - ¼ cup (40 g) Kalamata or green olives, pitted and halved
11 - 3 garlic cloves, minced
12 - 2 sprigs fresh parsley, roughly chopped
13 - 2 sprigs fresh thyme, leaves stripped
14 - 3 tablespoons olive oil
15 - ½ teaspoon mixed seasoning blend (paprika, Italian seasoning, Cajun, chili flakes, optional fish seasoning)

# Step-by-Step Directions:

01 - Pat fish fillets dry with paper towels to ensure seasoning adherence. Combine paprika, Italian seasoning, Cajun seasoning, chili flakes, optional fish seasoning, salt, and black pepper in a small bowl. Evenly sprinkle half of this blend over both sides of the fillets and set aside.
02 - In a medium bowl, combine halved cherry tomatoes, pitted olives, minced garlic, and thyme leaves. Sprinkle the remaining half teaspoon of mixed seasoning over the vegetables. Drizzle 2 tablespoons of olive oil and gently toss to coat all ingredients evenly.
03 - Preheat oven to 200°C. Lightly oil the bottom of a suitable baking dish with the remaining 1 tablespoon olive oil. Spread the tomato and olive mixture evenly in a single layer across the dish. Arrange seasoned fish fillets gently atop the vegetable bed, ensuring they fit comfortably.
04 - Bake uncovered for 12 to 18 minutes, depending on fillet thickness, until fish flakes easily with a fork and reaches an internal temperature of 63°C. Remove from oven, sprinkle chopped parsley over the top, and allow to rest for 5 minutes before serving.

# Helpful Notes:

01 - Drying fish thoroughly enhances seasoning adherence and improves texture. Resting after baking redistributes juices for optimal moisture.
