→ For Cooking

11 - Olive oil spray

# Step-by-Step Directions:

01 - Place grated zucchini, carrot, onion, and minced garlic into a colander. Season with salt and toss to combine. Allow the mixture to drain for 1 hour to draw out excess liquid, then squeeze thoroughly using a cheesecloth or clean towel to remove as much moisture as possible.
02 - In a large mixing bowl, combine the drained vegetables with flour, ground black pepper, egg, shredded cheddar cheese, and chopped fresh parsley. Stir until the mixture is thoroughly combined and cohesive.
03 - Portion the mixture using a tablespoon and form into small round fritter patties, pressing to compact each one into a uniform thickness.
04 - Preheat the air fryer to 190°C for 3–5 minutes if required by manufacturer instructions.
05 - Arrange fritters in a single layer in the air fryer basket. Lightly spritz with olive oil spray. Cook at 190°C for 10 minutes, flip each fritter, then continue to cook for an additional 3 minutes until golden and crispy on both sides.
06 - Transfer fritters to a serving platter. Serve warm, accompanied by sour cream, yogurt, or preferred dipping sauce.

# Helpful Notes:

01 - For crispier fritters, ensure vegetables are well-drained before mixing.
02 - Do not overcrowd the air fryer basket; cook fritters in batches if necessary.
03 - These fritters are versatile; substitute parsley with other fresh herbs or add vegetables such as bell peppers or cabbage.
