01 - 2 medium sweet potatoes, washed and dried

01 - With a fork, pierce each sweet potato 8–10 times around the surface to allow steam to escape during cooking.
02 - Rub each potato evenly with olive oil, then sprinkle with sea salt and black pepper to taste.
03 - Arrange sweet potatoes in the air fryer basket in a single layer. Cook at 200°C for 25 minutes, turning halfway through. Test doneness by inserting a knife—it should glide easily to the centre. Add 5–15 minutes for larger potatoes as needed.
04 - Once cooked, carefully cut a lengthwise slit down the centre of each potato. Fluff the interior with a fork and top with a pat of butter if desired. Serve immediately while hot.
